Sofrito and Cherry Blossoms
Good day!! So, I'm sure my title today is rather silly, but I did want to chat about a few things, which essentially have nothing to do with one another, but are on my radar today.
First, I hope your week started off well. I managed to get lots done, even with Kelsey home for the day. Honestly, I think her on again, off again headache and scratchy throat is seasonal allergies. I'm having a bit of that as well. Gianna is feeling better, but not 100% with her belly, but she pushed on through yesterday - making it through the day - and also found out she aced (100) on her Italian test!!
Moving on to today, I got to the supermarket early, right after dropping off the girls at school. My friend Andrea shared her recipe for Sofrito with me and I decided to make it tonight.
I'll get started on this as soon as I finish up some work this morning. The girls are always famished when they get home from school, so I reversed the eating order to having our "dinner" or big meal when they get home and then later on in the evening, we have a snack. It's been working out for the past year, so I'm not going to mess with a good system. Ok - so here's the ingredients...
I'll just sautée it all in olive oil, add black beans and serve it over rice. Yum!!!
I was also pretty productive this morning cleansing my house. I'm not talking about with cleaners - I saged the entire house. Sometimes you just need to get rid of the negative energy in your environment and I thought it was time. Now, my entire house smells like church on Palm Sunday lol.
I think I blogged about this before. As many times as I've been to Washington DC in my life, I've never been there during the Spring Cherry Blossom Festival.
This coming Spring, the festival runs from March 20-April 13, 2019. I'm trying to figure out the best weekend to go. Of course, my kids are not into it, but tough. Oh goodness! This is certainly going to be one heck of a busy busy busy week for me.
I've got Vegas in 2 days and I leave for China in exactly one week from today!!! I have so much to do between now and then I must be partially crazy to put all of this stuff on my list of to do's. But I've got to remember that for the past few weeks I lost a few hours each night with watching the MLB Post Season and being glued to the boob tube. Oh well, we all choose our own destiny. And right now, mine is pretty darn busy. LOL
After all of my running around yesterday, our little gang headed over to choir rehearsal as usual. But this choir rehearsal was not at all as usual, because the kids got to come dressed up in their Halloween costumes...
Dave and I were even going to get dressed up for the fun of it until we realized that not even one other adult came in costume. LOL So I guess we'll wait until tomorrow.
