Elisa's Daily ScoopThrowback to Ireland!Back again folks!! How is your day going? I'm having a great morning so far, with yet another day of lots to do! First, I need to do a few errands - have to make a return to Old Navy and then a quick run over to the hair salon. I had a "sombray" done to my hair last Saturday. It looked fabulous! But, then I went for a keratin treatment on Tuesday and it stripped the color slightly. So, I'm thinking I may just have to get an overlay to make it look less brassy. I’m going to go to see what my hairdresser Ismari thinks and see what she says I should do. Later this afternoon, I will be meeting Denise at the school (along with my kids) to begin set up for the Father Daughter Dance, taking place tomorrow night. The theme this year, as I've mentioned before, is "Red Carpet." Can't wait to show you pictures on Saturday! I'm happy to report, I'm in good shape for my trip to Yellowstone on Saturday. I'm all packed and so are the kids - a few last minute items that I'll throw into the suitcase early Saturday and we will be on our way! I just love trips that are casual - no need to fuss over dress-up outfits and planning what to wear each day. Now, I know my Eastern Europe trip with Tanya in June is going to be a bit different. We'll have a combination of "dress-up" and dress down days and considering that it will be summer, I know we will both want to dress "cute" on most days! I have time for that -- will begin giving though to it after I get back at the end of the month from Yellowstone. Don't think I forgot that today is Throwback Thursday!! It's my turn to tell you a little story from my travel past!! Today, I'm going to take you back to 2012 and our trip to Ireland -- the first European trip for my two little daughters - Gianna and Kelsey. I'm coming to you from Oregon's state capitol - Salem! So I figured that since I'm spending a few days here in Oregon, that I would share with you the TOP 15 FUN FACTS ABOUT OREGON! Check it out down below and also on our 15 for 2015 page (where you'll also find lots of other fun Top 15 lists!!) In the meantime let me tell you a little bit about yesterday and also what the plan is for today... We left Redding, CA yesterday morning and headed for the deep blue waters of Crater Lake. On the over 4 hour drive to the National Park Cosette slept most of the way, and missed seeing the gorgeous scenery and the prominent views of Mount Shasta. We ate breakfast on the road, and once we finished off our savory breakfast burritos the kids were more than ready to DIVE into their Cinnamon Rolls!! (That we ordered to go from Cinnaholic - which btw does mail order!) And if the kids were eating their's then you sure as heck better believe that I was gonna be eating mine too! While they are no where near as good as they are fresh out of the oven, they are still the BEST cinnamon rolls I've ever had! Click HERE for info of how to order your own! We arrived at Crater Lake NP, and took a short hike in one of the snowiest places in the USA (receiving over 44 feet of snow each year). With all of the snow it was definitely a different sight to be seen then my last visit which took place in the month of September (2009). And it was just beautiful! Once we left Crater Lake, it was time to begin our journey to Eugene. The drive was just lovely and we boogied in the car for the next 3 hours through the lush forested land. When we finally arrived to Eugene, we did a drive tour and then sought out the best vantage point before heading over to dinner... Dinner dinner dinner...all I'm gonna say is "Holy Wow!" Any vegan that has not been to Cornbread Cafe is MISSING OUT! This place is the BOMB dot Com and I will be doing an upcoming Foodie Friday on this meal with pictures galore to tempt your taste buds with!
