Travelin' Cousin TuesdayHappy Veterans Day! I want to extend a big thanks to all of our Veterans and members of our armed forces today as we celebrate Veteran's Day. God Bless You!! And Thank You for all your sacrifices!  So, what could be more apropos for Travelin' Tuesday than for one of the Travelin' Cousins to be leaving for a bit of traveling' fun!! That's right. Today Tanya and her kiddies are leaving SoCal today for The Big Apple for a brief stay before departing for Iceland later in the week! I'm so excited to see my cousins!! Can you guess the #1 thing that we have on our agenda for the two days this week that we'll be hanging out? I'll give you a hint - it involves food -- that's right - EATING!! Although the gang is arriving Tuesday night, we will not be getting together till later in the day on Wednesday. We will be having dinner at my house, which will be simple, but tasty -- "chikn" burgers (vegan) along with a yummy Apple, Fennel & Celery Slaw that I'll be making; and baked sweet potatoes. Nothing too exciting about that meal; but on Thursday, we will be going on a little food excursion in Astoria, Queens for some great Italian food with a special vegan menu, topped off with dessert at a nearby "sweetery" which boasts an extensive menu of non-dairy ice creams and cold treats. Of course, we've built our entire itinerary for the two days we'll be together around eating!! You can see from the gallery of pictures, most of our trips together center largely around food!!

Here's our list: 1) Yellowstone Trip Finalize our accommodations and lay out our daily itineraries for the week. 2) Eastern Europe Lock into final list of cities/countries we will include on this trip along with the sites we plan to see in each location. 3) Travelin' Cousins Blog Update a few of our pages for you for more up to date reference and information. And starting this weekend, Tanya will be LIVE BLOGGING from Iceland each day!! So, be sure to check in daily! I don't know about you, but I am very enthusiastic to hear about all she has to say! Not only is it Veteran's Day, but it's also a Travelin' sort of Travelin' Tuesday!  Luckily somehow I fit (stuffed) everything into our cases! With all of the different elements that are to be involved in over the next 3 weeks, I packed plenty - and hopefully I haven't forgot anything! Yesterday was completely jam packed from start to finish with all of the last minute things to do. I also managed to get my nails done, and took the kids to choir rehearsal, where my board meeting ran very late... Came back home, made dinner, and somehow finished before midnight! Whew. And this morning we are about to fly out on a connecting flight from Orange County to Houston to NYC! We're all looking quite forward to our short little visit, all before heading over to Iceland! Our first stop will be heading to visit my Grandma, and Dad in Queens.
