A Quick Check-in

Howdy folks!

Sitting here out in the Long Island sunshine writing my Scoop!  I think Spring might finally be upon us!

I'm having a bad case of Spring Fever - wanting to get more things on the calendar besides my excursion to the NYC Vegetarian Food Festival 2019 on May 19th.

Will be getting tickets to a number of events in the coming days, which I'll share with you as soon as they're booked.

Tomorrow night is Kelsey's Father-Daughter Dance, sans a father (insert laughter).  Yeah, well, what can you do.  She will be attending with her friends and her big sis, Gianna will be there for her as well, since she is volunteering with a bunch of her friends and fellow grads from last year.

I've also been cooking up a storm for my dad - bringing him all kinds of plant-based dishes and snacks, which he is thoroughly LOVING!!  

Tomorrow, for Foodie Friday, I'll post my weekly Vegan Recipe, which is one I'll be preparing for Dad this weekend!
