Getting ready for another trip
Jeepers I know that I have 5 days and all before I leave, but I have so many thing to do between now and then that I feel as though we are leaving tomorrow!
I have it scheduled that I should get my packing done today and I sure hope that I can keep that plan. Of course I'm not really unpacked and just got back from NYC yesterday morning.
Meanwhile I thought that I would have the day to unwind, catch up and take care of things from home. But this is not gonna be the case whatsoever.
It was nice to finally sit down yesterday and start to doze off. Albeit was after 1am local (and still being on east coast time we are talking 4am for me and Dave).
So many time zones!
Yesterday was Dave's birthday and this was the first year that he has opted to jump on the bandwagon and do like the kids - have me cook whatever his heart desired (vegan of course) and stay at home rather than running around and rushing from place to place in traffic.
I'm a gal who doesn't like shortcuts and loves making things from scratch, so quite typically when there is a dish to be made there can be several "other" recipes that go into the prep so that I can have those items on hand. Butter being one. And if I may say so myself - and I'm gonna anyway...the vegan homemade butter that I make is better than any product available on the market and loved by all!
So after our LONG layover in Denver which meant sleeping on the floor at the airport...

We were back on our way to the OC. Once we landed Dave was heading straight to work - yup even on his birthday...
What can I say - the guy likes to torture himself.
We carpooled to his office. Dave lost his reading glasses along the way. I went to go buy him a new pair along with picking up a few additional items that I needed to start my day in the kitchen.
While he was at work, I still had much to do that was not birthday related. But travel related.
Ya see after doing the Five Boro Bike Tour both Dave and I now want to add this ride to our repertoire of annual bike rides.
However our calendar already was booked over the 2019 Five Boro Bike Tour date. We were booked on a cruise to Bermuda and the Bahamas.
So I got to thinking... Why don't we adjust the date for the cruise and either do it right before or after the bike tour. Well that didn't quite work because there is no sailing right before or after the bike tour.
Hmm...okay new idea!
Let's take the cruise right after the 2019 MLB All STAR GAME, which takes place in Cleveland. Low and behold this plan is gonna work!
So I made a call out to the booking agent and discussed our options. The other thing that I had to discuss was the fact that our March 2019 cruise to the Canary Islands had been cancelled by the cruise line. UGH
I've now moved that to February and in between ski trips. Which I think is okay, especially since the ski resorts have been getting hit with late winter, early spring storms and bringing on freshies for a much later season. My fingers will be crossed.
Now back to the birthday -
The birthday boy only had one additional request and it was to go to Kean Coffee in Tustin. IMO the absolute BEST coffee around! So after picking Dave up that is where we headed. Cosette came along and we got to share some stories, share some laughs, discuss upcoming plans, chat and enjoy ourselves over some lovely coffee drinks.

Then back to the house and back to the kitchen for me!
Hours later, we all gathered around had plate after plateful of Baked Ziti and then sang Happy Birthday in the company of my mom, Dave C, Dominic, Cosette, Brigitte, Houston, Jet, Andrew, Matt, the birthday boy and myself.

Gifts were next and then we were suppose to watch a Woody Allen flick (Hannah and her Sisters or Annie Hall) but could not find then available through Netflix or at Target; so instead we all sat around and started a documentary about RUSH. This is where I opted was a good time and place to doze off.
So with much to do today and squeezing in a planned call with Elisa, it's time that I go and cross my fingers that I get everything on my list accomplished.
