Greetings!!! It's Friday and the beginning of the weekend!!

Wow - I cannot believe how the day flew yesterday and I never got back to blog!  I did put up my quote of the day, and I had to laugh when I received my emailed Scoop to see that was all that was on my column lol.  

So, let me catch you up to what's been going on.

First of all, I had my weekly article due for ThisIsTheBronx.info, for which I wrote about my journey to becoming a vegan.

I thought it might also be fun to post a new vegan recipe each Friday that I make during my new-found dietary way of life!

Who knows - maybe you'll want to try them yourself!
Here goes -- Travelin' Elisa's Vegan recipe of the week:

Vegan Pasta Alfredo

I made this the other night (complements of Eating Well Magazine),  and it was really super easy!! And remember, vegan recipes are for anyone just looking to have a meatless meal here and there, or cut out dairy once in a while!

Ingredients

• 1/2 cup whole wheat breadcrumbs
• 1 Tbs chopped fresh parsley
• 1/2 tsp grated lemon zest
• 4 cups cauliflower florets (1 small head)
• 1 cup raw cashews
• 8 oz elbow pasta (or any other kind)
• 4 cups lightly packed thinly sliced kale
• 3 Tbs lemon juice
• 2 Tbs white miso
• 2 tsp garlic powder
• 2 tsp onion powder
• 1/4 tsp salt
• 1 cup water

Directions

1. Put a large pot of water on to boil.
2. Combine breadcrumbs, parsley and lemon zest in a small bowl and set aside.
   
3.  Add cauliflower and cashews to the boiling water. Cook until cauliflower is very tender (about 20 minutes). Using a slotted spoon, transfer cauliflower and cashews to a blender.
4. Add pasta to the boiling water and cook, stirring occasionally for 10 minutes. Add kale and cook until pasta is just tender, about 1 minute more. Drain. Add pasta and kale back to the pot.
5. Add lemon juice, miso, onion powder, garlic powder, salt and 1 cup water to the blender and process till smooth.  Add the sauce to the pasta and stir until well coated.
6. Serve topped with the breadcrumb mixture.

While Tanya is doing some last minute tasks before leaving on her next trip to Arizona for Spring Training and then to Flagstaff  and Utah for some end of season skiing, I'm here on Long Island with a few days of rain.  It's actually quite peaceful, but, it is a bit of a nuisance to my gardener who is trying to do a Spring clean up for my open house on Sunday!

I can't wait till it all the leaves and mess are gone and the landscaping looks lovely again with Spring here!

Am I behind on my traveling?

Howdy folks!

It's another Friday and we are getting ready to leave first thing  tomorrow morning for my 4th trip of 2019.

While the people around me feel and act like I'm gone all the time and how they can't believe that I'm already leaving again.

Meanwhile from my perspective I feel as though I'm kind of behind on my own track record of trips completed by this time of the year.

Let's take a look back (just a few years) -

Ahhhh the memories!!

Well we are about to make some more travel memories starting tomorrow. But before I do I have a bunch of last minute preparations to get in order and a coaching session on the ice with Cosette.
