Full Non-Dairy & This Week's Vegan Menu
Well hey there and Happy Monday!
Another gorgeous Long Island day here. My Kelsey had the day off today due to teachers' meetings and so we'll probably spend a nice afternoon together bonding before Gianna gets dismissed from her school. Elisa transitions to 99% Vegan Diet... Guys, you already know that my dear cousin Tanya is and has been a passionate non-dairy vegetarian for 30 years and a vegan for 11 of those years. Her cousin Elisa (ME!!) started the vegetarian journey waaaay back, over 3 decades ago,with a brief stint at being a vegan. One of my blockages through the years has always been my personal difficulty with giving up dairy. While I have not bought "regular cow milk" in decades and opted for rice, almond and coconut milk for drinking and using in my recipes; and have used plant-based butter for many years, I had not as yet given up eating cheese products. Whether it be in cooking, by itself or out at restaurants, it was a struggle for me.
However, over the past month or so, I have found that my body just cannot tolerate the heaviness of dairy-based products. As part of my desire and personal intentions to be more spiritual, raise my vibration and be healthier, it seems that the universe and my body have conspired to help me do just that! And as a result, over the past few weeks, every time I have the slightest bit of cheese, I feel rather sick.
So, I'm happy to report that I have successfully transitioned to dairy free!! Last month, I changed all of my beloved hot chocolate drinks and exclusively order and use coconut milk! Let me tell you how DELISH they are!! Now, as you may have noticed, I said that I'm 99% vegan, so I will explain. I have not as yet completely cut out every single item that may have been produced using milk products or butter - such as a muffin or cookie, but I'm moving closer and closer. Like all things in life that we want to fully commit to, it requires a step by step move forward, until we are 100% at our desired goal. So, wish me luck and send me positive vibes to get there!! I thought I would share my dinner menu for each night this week which might sound appealing to you!
Monday:
Lentil Soup (vegan) (I added string beans tonight, along with farro!) Tuesday: Chikn Burgers (vegan), Roasted Baby Potatoes and Romaine Lettuce Salad with Chick Peas, Cukes in Balsamic Vinaigrette Wednesday: Vegan Cauliflower Fettuccini Alfredo (made with cashews and kale) Thursday: Pasta with Green Vegetables in a garlic, oil and veggie broth sauce (I'll be using Trader Joe's organic Green Vegetable Foursome with broccoli, peas, french green beans and zucchini) Friday: Cauliflower Crust Pizza with Vegan Mozzarella with Butter Lettuce Salad with Grape Tomatoes, Cukes and Radishes (Trader Joe's offers packages of yummy vegan mozzarella shreds) Pretty easy right ? Balanced too. In Vegan News... You guys know how much I LOVE Disney World. Well, I just read this week in VegNews that Whispering Canyon at Disney's Wilderness Lodge in Orlando, Florida is now offering a vegan “all-you-can-enjoy” skillet loaded with barbecue jackfruit, spicy sausage, beefless tips, herb-crusted “trick’n chick’n” and roasted veggies!!! How amazing does this look???
