What a morning I have had. So much so that it has poured well into my afternoon. So much to do, and I'm glad that I can announce that I've been very productive. However on the same hand these things on my list are taking FOREVER....
I have so much to do before I leave for the east coast to be assure that life still runs smoothly for the month that we will be away.
Plus there is a slew of choir related tasks that as the President I must tend to and take care of.
No rest for the weary.
You know that it happens to be Travelin' Tuesday and you might be thinking that I still have time...
Someone had even mentioned that they were surprised that I've started packing since we don't technically leave for the east coast until next Tuesday. Well the only thing is that I'm leaving for Austin on Thursday and tomorrow's schedule is filled to the brim!!!!
Basically leaving me today to finish just about everything!
But like I said, I am making progress and late last night I worked on the route for our Ireland trip next March. So today I even managed to book another hotel for that trip. WooHoo
I'll get into chatting more about Ireland at a later date. I always seem to be working on a number of different trips that it can get a bit crazy...
One of the other trips and the most recently added to our calendar is going to China and as of yesterday we got the very exciting news that Stacia and her roomie have also booked the China trip and are coming along! GIRLS TRIP TO CHINA!!!
Another thing that I locked in was our camping sites for a family camping trip in October. A few days ago my dear little Mika had asked me about going camping - that set the fire under my booty and now we are BOOKED!
Aside from travel, you guys know that we are all about food. And yesterday happened to come and go without me realizing that it was National Veggie Burger Day until today. DOH
Well we just so happened to grab a bite at Veggie Grill on our way over to choir last night and guess what Dominic ordered???
A Veggie Burger and a DAMN good one at that!
Amazing Veggie Burger (c)travelincousins.com
It's made with the Beyond Meat Burger and if you haven't tried it yet - well then you are MISSING OUT!
It has won the hearts of both vegans and non-vegans alike. Go find it and try it!!
I've got work to continue. See ya on the flip side! -T

Trips to plan
As the week progresses, the weather is not getting any better - still cloudy, rainy and gloomy!
I'm crossing my fingers that we get some sunshine tomorrow and beyond.
Starting to get excited about our upcoming trips. Yes, I said TRIPS - in a little less than three weeks, we have our Cousins Chicago Road Trip, which I'll get back to in a little bit.
Then yesterday, Tanya reminded me that we have to lock into our travel dates for our Croatia Road Trip which is scheduled for next June (2018).
Actually Tanya and I have not as yet planned anything for Croatia except that we are going. We have to plan our route (i.e.: north to south or south to north), the specific cities and towns and of course, bookings! Airfare, hotels, rental car. Last but not least, restaurants that we will be frequenting.
And speaking of restaurants and meals, Tanya made a list of a number of eateries and dessert joints for us during our upcoming Chicago road trip.
Their menus are perfect for both vegan, non-vegan and "picky" (which is the case of my dear Kelsey).
I am so excited about them after checking out the menus yesterday, that I'm listing them below with links. For anyone headed west, you might want to keep these restaurants in mind.
Well, we never tire of talking about food here on TC! Yesterday happened to be National Veggie Burger Day! Check out Tanya's Scoop for more on this!
Back to last night -- I was doing some serious multi-tasking in the kitchen - preparing lunch for the kids for today; cooking dinner; making the dog's dinner - when I went to the toaster oven to remove a bagel (for Gianna's Lunch) and I'm not sure how I did it, but I accidentally, put my left hand in too high and two of my fingers slammed into the heating coil.
Can you say OUCH?!!!
The burning sensation lasted well into the middle of the night and all I could do was put ice on it to ease the sting.
Today, it's feeling better, even though it's still sensitive, but it is not pretty to look at. Well, that was about it for the excitement in my house.
