Lake Tahoe here we come!
We are here on our second potty break and I already have much tell...but just not enough time to tell it.
For now I'll just share these few pics and then later on I'll fill you in on yesterday's SCOOP, where we are going today (bet you have no idea), Dave C's packing style, leaving on schedule, taking the Interstate 5 vs Highway 395, one very crazy EXTREME, the different types of trips I plan and much much more!

Okaaaay, I'm back. A day late, but none-the-less here I am.
Whew! We were on the road for pretty much 12 hours yesterday as we made our way up to Lake Tahoe.
Here are a few things that I had been eager to share with you:
A. After checking out some of the reviews from Kirkwood Ski Resort (which is where we were planning on skiing today). I decided that we needed a pow wow and to take a vote. To ski or not to ski that was the question. And if we didn't ski, then we would head to Mono Lake and finally see the South Tufa. Vote was made and we decided to go to Mono Lake - which also meant that we could leave at 7:30a rather than 5am.
B. When I was loading the truck I had noticed just how very large Dave C's bag was! His bag for one person was the same size as not one bag 2 of the bags that I was sharing with Cosette and Dominic!
C. I hate not being on schedule and the more people in your party, the more difficult it is to leave on time. But since we were taking the 395, we didn't have to worry too much about traffic and therefore leaving at 7:30a was fine and dandy!
D. For years and years on end we had always taken the 5 freeway. BUT and this is a very big BUT... If you leave a minute past 5am (coming from our neighborhood) you can definitely expect MEGA traffic all the way through Los Angeles.
E. Now you, I and everyone else know that I am ALWAYS planning something. Well here are the different types of trips I plan - Ski Trips, Biking Trips, Sightseeing Trips, Backpacking Trips, Camping Trips and eventually I'd like to even start planning Tree Top Adventure Trips.

CoreLife Eatery L.I. Grand Opening
It's Friday already? Boy did this week fly by! And filled with lots of fun experiences! One of these was my visit to the grand opening yesterday of CoreLife Eatery in Farmingdale, which I'll get back to in a jiffy.
Yesterday, I received an email announcing that tickets had gone on sale for Rodgers & Hammerstein's Carousel, which is coming to Broadway in March.
Kelsey and I had been tracking this show since reading that a revival would be opening in the Spring of 2018. What's more, it will star Jessie Mueller, who won a Tony Award for her performance in Beautiful, The Carole King Story.
Well, I immediately ordered tickets for a Sunday matinee performance in April for me and my two little ladies! So excited and cannot wait!!
Getting back to yesterday, I want to tell you guys all about the newest foodie destination here on Long Island for healthy dining - CoreLife Eatery.
I was all set to do a write up about this new, all natural franchise opening in Farmingdale yesterday, right here on my daily scoop for today. But, then after my visit - which I thoroughly loved - I decided to turn it into a full Foodie Friday article for next Friday, January 19th.

You may be asking why. After meeting the franchise owners and a member of corporate, I was really inspired to talk about what impact, I believe this franchise will have on Long Island, and in general, to the fast food market.
So, let me just say, that they did one helluva job for opening day! Welcoming people, educating them on the menu and the ordering process and the overall friendliness and warmth of CoreLife Eatery.
My inspiration to do a full feature came from two things - First, the franchise's commitment to healthy, fresh food with no GMO's, no artificial colors or flavors, no high fructose corn syrup and antibiotic-free chicken. Additionally, it is 100% gluten free with lots of vegan options. There's a great deal to be said about how having healthy options in fast food is becoming a growing trend.
Secondly, after chatting with the new franchise owners, I really wanted to do an article that went more in-depth on what it takes to run a franchise on Long Island and what their plans include for more CoreLife Eateries here on Long Island.

I built My Own Bowl with napa cabbage, romaine lettuce, carrots, peas, chick peas and quinoa with a citrus poppyseed dressing.
My taste buds were doing a little dance while I was eating and would not allow me to stop! More on the food next Friday!!
Gianna loves anything Thai, so I did a take-out order for her of Spicy Thai Chicken & Rice Noodle, with Napa cabbage, spicy Thai rice noodles, spicy chicken, peppers, scallions, sesame Sriracha sprouts, Thai chili sauce. She loved it!!
A big thanks to Mike, Ryan and Pauline who invited me back to the store to chat more, take more photos and do a feature worthy of this new much-needed healthy eatery!
