Elisa's Dad Embraces A Plant-Based Diet
Oh what a beautiful morning!! Unbelievably gorgeous out!
I hope your week is going well. Mine is going great! This is one of the first school breaks that me and the girls did not have non-stop plans. I had planned to do a bunch of daycations this week, but of course, with Dad going through his treatments, we are staying close to home. Yesterday was a GREAT Day for my family. We had our weekly meeting with the radiation doctor and he was very pleased with Dad’s pain reduction progress! He said that after his exam, Dad was very strong and we had overcome one hurdle in the cancer battle. I high fived Dad at this news, as did my mom.
He only has one more treatment after today’s and a week from today, we will be meeting his oncologist to discuss the next step in Dad’s treatment. I’m really proud of him, as he has had to deal with an enormous amount in the past three weeks - both physically and of course, mentally, just digesting it all.
But, he’s a fighter and I’m confident he will be back to his normal self soon, and with Summer coming, he is looking forward to getting outdoors to plant and tend to his garden! The other bit of good news is that we’ve put Dad on a plant-based diet, with a great deal of it consisting of vegetable and veggie juices. I as so happy when I heard his medical doctors concur that the juices and vegan diet was part of his wellness protocol. My sister has been leading the charge in doing research and even making his juices and meals. Going forward, we are going to split the responsibility and I will be serving him up some yummy vegan meals! I usually get my daily juices from the local natural juice bar, but I’ve decided to order my own juicer so we can make them at home, any and all the time. I’ve been experimenting with different combinations of ingredients and one of my favorites is Carrot, Orange, Lemon, Ginger, Parsley, Kiwi and Romaine Lettuce. Gianna is completely hooked on juices as well so I’m sure in addition to the incredible health benefits, we will also be seeing a decrease in our waistline!! This week, I’m fixin’ up a number of new Vegan recipes for dinner. I’ll share my recipe of the week this Foodie Friday! Well dear ones, I'm off to cook for the day!
