5 Foods (and Vegan Recipes!) that Taste Better in November

Most of us in colder regions of the world are throwing on sweaters, raking leaves and spending a bit more time indoors, which more than likely involves a greater focus on cooking. And in my humble opinion, there are just certain foods that taste super good with the changing weather.

Here are five yummy items that are at their tasty peak in November along with one mouthwatering Vegan recipe for each!

1. Parsnips
​

November is a wonderful time for root veggies.  You may wonder why.  Well, after the first frost, their starches begin to turn to sugar.

Why not combine a number of fall favorite root vegetables for yummy side dish or as the basis for a comforting bowl by adding a grain such as farro, barley or quinoa and some leafy greens.

2. ​Leeks
​

Peaking in the Fall, leeks provide a great many health benefits which include reducing risks of hypertension, great source of folate, heart healthy and preventing inflammatory diseases.

3. Kale
​

​Also known as leaf cabbage, kale is no longer used merely as a garnish. Versatile for cooking, whether raw or cooked, kale contains fiber, antioxidants, calcium, and vitamin K, among others and is also a good source of vitamin C and iron.

4. Brussel Sprouts
​

These cute little vegetables that look like mini cabbage are quite versatile and good for you. They help to lower and balance hormone levels, improve digestion, reduce oxidative stress, protect the heart, aid the immune system and more.

5. Cabbage

Whether green, red, or white, Cabbage or headed cabbage is closely related to  broccoli and cauliflower and Brussels sprouts and packs a healthy punch. In addition to lowering cardiovascular disease, promoting brain health, preventing cataract risk, and reducing inflammation, it also fights cancer.

Her professional career and background was in film (writing, production and acting). Currently she is a stay at home mom - who is hardly ever at home, and who’s passions are: everything travel related, food (both cooking and eating), photography, skiing and of course, shopping!
