Vegan Birthday Celebration, Taco Bell Hotel and NYC Vegetarian Food Festival
A Big Friday Hello to you!!
Lots happening on this end today and throughout the weekend. First, a brief recap about Gianna's 15th Birthday yesterday. Thankfully, it was a beautiful, sunny day, which just set the mood for a happy mood from my girl. After picking her up after school, we headed into town (with Punkin') to get the birthday girl a vanilla bean coconut milk iced latte to cool her off. She was super excited about her vegan dinner later in the day - broccoli ravioli and a huge vegan "Campfire Cake" from Sweet to Lick, here on Long Island. However, we had a few hours until we could enjoy all the yummy goodness! Kelsey's play rehearsal went until 6pm, so clearly, no family celebrating until she was home. We had more family to join in the celebration with "Aunt Danielle" and cousins Nolan and Julian arriving in time for dessert!
Though everyone is not vegan in my family, they seemed to really enjoy the cake! I know my birthday girl sure did!!!
Moving right along... Another Friday and another article featured in ThisIsTheBronx.info. This week, it's more vegan talk --
THE BRONX VEGAN OPPORTUNITY

Personally speaking, as a travel blogger and vegan, one of the highlights of my excursions near and far, is researching and experiencing vegan eateries wherever I go. In fact, some cities around the country are quickly gaining a reputation for their enormity of vegan restaurants and food options!
With all this said, I must add, that when it comes to The Bronx, the vegan experience is a tremendous opportunity for visionaries in the food services industries. Right now, across New York City and Long Island, there are limited choices for us vegans. Manhattan leads the way with the number of options from which to choose, with Brooklyn running a close second with the borough’s vegan pop up markets and eateries. Here in the Bronx, the opportunities are limitless! To date, there are only a handful of entrepreneurs, mostly women ironically, who see the void in this growing demographic. According to Fortune.com, one of the largest fast food chains is getting into the hotel industry!!
Sounds pretty insane right? Well, according to the article, Taco Bell "has announced plans to temporarily transform a Palm Springs, Calif. hotel and resort into “The Bell: A Taco Bell Hotel and Resort"."
Fortune goes on to say, "Taco-themed rooms. Taco-inspired poolside cocktails. Taco-themed nail art and fades at the salon. And, natch, a taco-centric gift shop. These are just some of the plans the chain has revealed, with other experiences (including new menu items) still to be announced." For you "taco" lovers, the hotel is scheduled to open on August 9, 2019 and although the company advised that The Bell would be opened for a "limited time," they did not say how long. Not sure I'll be checking this place out, but the food chain believes this is sure to be a hit with millennials. As for me, I have a crazy rest of the day and weekend. Tonight is Kelsey's play - Shrek, the Musical. I'll be heading over to see my girl later, along with Gianna, to cheer her on. Tomorrow, Kelsey will be participating in a Mock Trial, being held at St. John's University Law School, and thankfully, parents are allowed to come and watch! Kelsey is a member of the Defense in a "Bullying Case." Looking forward to seeing her in action!
I'm super stoked for Sunday. Me and the kids will be heading into Manhattan to attend the NYC Vegetarian Food Festival 2019.
The event is going on Saturday and Sunday (May 18-19) with a schedule filled with keynote speakers, food demos and lots of vegetarian and plant-based product and service exhibitors. Really can't wait! Well, I'm off to get my day going!! Have a happy day! -Travelin' Elisa xoxo |
