Big Apple & Vegan Meals A'Comin'
Well, a big hello to you!!
I was running around like a little chicken with its head cut off this morning. Mondays can be like that! All is good - everything is done and I'm here to say Welcome to the Week!
The good news is, I did manage to make dinner AND clean the house in only a few short hours!! I love having a hearty meal ready when the girls come home from school. They are usually famished, so, I reverse the order and feed them big after school and then something a bit lighter at what would be a normal dinner time for most.
Tonight it's Lentil Soup. My recipe is so EASY: 3 Tablespoons of Extra-virgin Olive Oil 1 onion (chopped) 2 stalks celery (chopped) 3 carrots (chopped) 1-2 cloves garlic (minced) 1 potato (chopped) 3/4 - 1 cup dried lentils, rinsed (I always eyeball it) 6 cups of water or vegetable Broth Salt/Pepper to taste
Simply heat the oil in a large saucepan and add all the chopped veggies (including the garlic) except for the potato. I like to add my salt and pepper in while they are sautéeing. Let them cook for about five minutes. Then pour in the lentils - stir everything together. Add the water and then the potatoes. Then just let 'er cook away for 45 minutes to an hour. That's it.
I am looking forward to this coming weekend so much! Me and my girls have our annual Big Apple Christmas Daycation this coming saturday which includes sightseeing, touristy stuff and of course, lots o eating - which includes a great deal of vegan eats!! This is what I woke up thinking about this morning!! I even made sure my Canon(r) camera was all charged for our upcoming day - even though it's 5 full days away!!
