Hey there!
A new day and a new week and I hope your weekend was gave you lots of good memories! Mine was certainly busy. Yesterday, in particular was super long and chock full of fun and productivity. After doing errands together with Gianna, me and my girl stopped for a relaxing early lunch at one of our fave places in Garden City, The Guac Shop Mexican Grill, for a vegan burrito. Filled with rice, sweet potatoes, black beans, mango salsa, lettuce and tomatoes, we grabbed our morning juice and headed over to Dad's house. Kelsey opted to stay home with Punkin and finalize a school project.
As a family, we have decided, that with Dad's current state of health, and with everyone's contribution to building his strength and getting him back to his optimum condition, we would regularly get together at his house each Sunday.
In addition to a big family dinner, it will also give us an opportunity to do the necessary cooking, juicing and review of the coming week's schedule of events, doctor's appointments and any other necessary meetings. Yesterday, was our first day with our new schedule and it was a success. Danielle and I took over the kitchen - cleaning out his fridge and replacing unhealthy items with new, healthier options, cooking Hippocrates soup, juicing and creating a new assigned weekly schedule of everyone's specific responsibilities throughout the week to contribute to the goal of making Dad well. Today, Monday, is my day to prepare a number of organically plant-based meals for Dad. Will tell you more about these great vegan recipes (with pictures) in tomorrow's blog. In other news... After getting the girls off to school, I'll head to the grocery store to do my food shopping both for me and the girls as well as for the necessary ingredients for Dad's meals. Gianna get dismissed at noon today, so while she studies for a few upcoming tests tomorrow, I'll be cooking away. On today's Menu:

Happy Monday to you!
Yup it's me and I'm checking in. It was a fun and very productive weekend. Which happen to be my favorite! But now Monday is here and although I am not leaving until 5a on Wednesday, I only have a few mere hours to be sure that all of my chores, errands, packing, etc.. Are all completed for my upcoming trip. Mondays are always hectic around here and now that I have to somehow manage to do the rest of over a weeks worth of catching up, it is about to be a crazy day. Yesterday was crazy busy but in a very fun way... Packed with Dave, made great head way packing for myself, had a bike ride, went ice skating, shopped for Chaplin's birthday, food shopped for the fam bam for while I'm out of town, made dinner and then went to go see Avengers - End Game. The kids LOVED it! I enjoyed it and the rest of the theater was super into it - more so than I can even ever remember at the movies. I also had a chore to do yesterday that I wasn't quite looking forward to... Canceling and adjusting Sicily reservations from a party of 6, down to just me and my gang. Insert sad face here. Oh well, although I did take pictures. I must be on my way if I plan to ever get all that is needing to be done accomplished. For now I'll say ttfn (ta ta for now - yup I said it!) -Travelin' Tanya |
