So needless to say that we love Yosemite and are looking very forward to our trip up there!!
I was suppose to start packing yesterday which since I said "I was suppose to", obviously it didn't happen yet.
I was too busy plugging away at making the MONSTROUS sized Thanksgiving shopping list - and I'm still not done with it!
As you should know by now, we are VEGAN. So there will be no dead animals or any of their by-products on our table this Thanksgiving or any other day of the year for that matter. But still in all we will be having a FEAST, usually it's a much larger FEAST then any of your average American Thanksgiving tables.
Anyhow what I'm getting at is that I've recently realize the horrific magnitude of using any item that contains PALM OIL. I won't go into any on the details here, but I URGE you to PLEASE read up on production of unsustainable Palm OilCLICK HERE So being that we don't use Butter, we were using a wonderful and delicious product called Earth Balance...until realizing the BIG Palm Oil mess. Good news is that Earth Balance is focused on keeping the Earth Balanced and they have been working towards using only 100% sustainable Palm Oil by the end of 2015 - not too far from now.
Well I have contacted them to get confirmation and they said that by the beginning of 2016 is when they will proudly present their first 100% sustainable use of Palm Oil report.
We here are looking very forward to this day - as we've enjoyed their products very much!
And now I'm not sure if you see my dilemma yet...but without the use of Butter or Earth Balance this make baking quite difficult to say the least! Solution: I will be making my own buttery spread CLICK HERE for the healthy recipe!
And now a quick throwback to this time last year...when me and my kiddos so enjoyed our vacation to Iceland! Gotta go back!
Taking Cosette to the stables today, doing some birthday shopping for Dominic, taking Dominic to his classes, and yes...packing, amongst all the other usual chores and errands that just come with my daily life!

Mommy Memories & Thoughts
End of the week quickly approaching. My dear cousin Tanya leaves for another trip tomorrow! Can't wait to see her pictures!!

On this end, we are looking forward to our weekend filled with riding at the barn. The girls cannot wait!! That's all they talk about.
Mommy talk... We've had a busy week at school this past week. Kelsey's prayer service was yesterday. Of course, Mommy was front and center watching her little girl on stage, saying her lines and video taping the entire event of this 4th Grade milestone!
Sunday, there will be a special 4th Grade mass, which will be a special day for Kelsey, her friends and of course Mommy.
Additionally, been doing a great deal of studying for tests this week. So grateful that both my daughters are such good students. Diligent, hard working and thriving in school.
I have to take some credit here folks. From the time my girls were babies, I've always been a stickler for routines and consistency. Being extremely anal, I have always been committed to giving the girls a safe environment they can depend on and I always believed that started with dependable daily routines.
It's funny, because since Kindergarden, when they started school, I would pick them up from the bus and make them repeat "Shoes off, homework books out, snack and homework time"
Bathtime and Bedtime have always been at a certain time. My mom always said I ran my house like a battle ship - committed to routine. And in the end, I believe it helped my kids feel secure and learn to self-govern themselves.
So, as a result, my schedule completely revolves around them - 2:30 to 5:30 is homework and study time. I thank God every day that my girls have and continue to grow into happy and healthy, mature young ladies! They are my pride and joy!!
Thank goodness we have always had the means to have made the decision at the beginning of my marriage that it was a priority for both of us for me to be a stay at home mom and focus my efforts on the children. It is a decision that continues to pay off!
Having gone through 7 years of infertility taught me that there is NOTHING in the world more important to me than my two daughters. They are the inspiration that makes me thrive to be a better person!
And remember, motherhood is what shapes our society so if you have a good man, (or a bad one for that matter lol) there is a woman to thank for that!!
Men who respect the mother of their children are real men!! Men with daughters who respect their mother set in stone their self esteem for the way they will view themselves throughout their lives and the type of men with whom they will eventually get involved.
Speaking of raising kids, my kiddies have been growing like weeds!! Kelsey's feet just keep getting bigger resulting in new shoes this past week and both kids needed new fall and winter coats!! Gianna is now officially in adult clothes and shoes! How did they get so big!!
Lastly, we had a visit to the oral surgeon this week. Sadly, both of my kids will be needing braces :-( Kelsey will need a few teeth extracted to get the process going. Thankfully, we have the best possible oral surgeon and orthodontist, who the kids love, and I know it will be a smooth and stress-free process.
Back to travel talk...I'm currently working on a number of articles. I am very excited about getting these published not only for your reading pleasure but for your travel and leisure time information as well!
I'll try to get these done before the kiddies get home. Today, after homework and some quality coloring time with Kelsey, we have some birthdays to celebrate.
Both of my dear nephews are celebrating milestone birthdays this week. Julian, just entered "double digits" turning 10 yesterday! And Nolan, my Godson, just entered his teens turning 13 today!
