I just a few short hours I will be boarding my flight and en-route to Austin, Texas!!
Who woulda thought?! Me heading to Austin in search of vegan eats!!
The Austin, in the Texas. Home to some very serious meat eaters and cattle ranchers. I was in just as much if not more shock than you when I realized the booming and quite delicious looking vegan eats and treats (I mean come on - I planned an entire trip around it!)
Actually the timing couldn't be more perfect.
A friend in the vegan community had recently visited Austin and I must say that I was truly jealous of all the wonderful food finds that she shared via social media. She is a trusted foodie and really had me drooling. I had to find a way to get to Austin..
Well within a day or two I came to realize that a good friend who is always traveling for work, happened to just about be starting on tour with the band Muse.
And guess where they were going to be on the weekend before I head back east... A weekend that I really didn't have anything planned.
If you guessed Austin, you are absolutely correct!
When things come together so perfectly - who am I to say no and to dismiss the gift that the Universe has presented before me. *Same type of thing recently happened regarding our trip to China.
So while I have been busy packing for the big trip back east, I was also packing for the little trip to Austin.
Hopefully I didn't forget anything... but most importantly that I bring my appetite!
As you know Fathom Events was hosting a cinematic special last night that Dave and I managed to take advantage of... Again because schedules just so happened to work out perfectly.
We saw The Godfather for the 45th anniversary.
It was quite a treat to catch on the big screen and just as outstanding as seeing it the very first time.
Yesterday was incredibly non-stop busy and the very first chore of the day was dropping off our sweet little Goldie to be spayed. She was due to be picked up between 2pm-4pm and with all else that I had going on there was no way I could make it before 3:30p.
There she was all doped up but with a hope in her eye - knowing that it was time to go home.

HOWDY! This week is surely moving right along. Both of my girls had their first finals today - social studies.
I was studying quite a bit with Kelsey last night and I'm very assured that she will ace the test since she knew everything on the study guide very well.
Gianna does not need my help studying as much as her sister. She has done amazing on all of her tests in the past few weeks, so I'm confident that her finals will be no different!
So, why is Tanya headed to Austin??
I'm always impressed with how many trips that Tanya takes throughout the year, but I was most impressed with how she was able to squeeze in an unexpected trip this month!
Yes, that's right - my bestie cuz is off to Austin, Texas today. You may be thinking, "Why Austin?"
Well, this is her first jaunt to this Texan city and she decided to take a weekend trip to fully immerse herself in the vegan food scene.
You can say that this is truly a Foodie Trip! I am looking forward to hearing the inside skinny and I can assure you that even the biggest carnivore's mouth will water over the food indulgences since Tanya is one of the most discerning and upscale vegans around!!
I've never been to Austin before but it has evolved into quite the vegan eats city from what I've heard from Tanya. And that is precisely why she has decided to check it out!
...So, I guess now is a good time as any to give you some history on the vegan food scene in Austin...
I would not have taken the heart of Texas to be one of the top vegan cities in the country and decided to do a bit of research into how this came about.
I found out that while this capital city does not have the most vegan restaurants (that would be Los Angeles folks,) AND it does not have the highest concentration of vegan restaurants per person (that would be Portland); what it does have is an exploding vegan community.
Within the past five years, the expansion of vegan eateries and restaurants has grown and the momentum keeps going.
According to LoneStarPlate.com, "In 2009, Austin had just one vegan restaurant: Casa de Luz. Joining Casa, were seven or eight vegetarian restaurants. Austin was home to the Lone Star Vegetarian Chili Cook Off, two vegetarian meet up groups, and one vegan group (VRA)."
Well, today, in 2017, that number has grown to more than 25 and growing!
In fact, in 2013, Austin was named by PETA, the most vegan friendly city in the U.S.
What I'm most curious and excited about is how Tanya is going to narrow down all the choices and make her selections about where to eat on this trip!
I cannot wait to find out!
In other travel news... I will be starting to organize my suitcases in the coming week for our Chicago Road Trip, which begins on June 26th.
It should be fairly easy to pack for since everything is quite casual on this little adventure. T-shirts, jeans, a few pairs of shorts, sneakers and some sweatshirts. I think the biggest challenge will be the suitcase situation. Since we are driving (obviously - it's a road trip!), we will have to limit the size of our bags since we'll be sharing the interior car space with them.
And, this trip will be comprised of 5 ladies - me, Tanya, Cosette and Gianna and Kelsey.
Not to mention, we'll want to also have some provisions or the ride (water, snacks, etc.).
