Vegan Mexican Food?!
Well helloooooo there!
It's Sunday and it happens to be my last "free" Sunday/Weekend until... April 7th - Yup, you read that correctly!
So aside from all of the last minute chores and errands that must be done before my gang leaves on Tuesday morning. I'm also trying to give Dave and the kids some sort of down time.
Yesterday wasn't so bad in terms of things to do - there was plenty of pampering for myself (nails, salons). Both Dominic and Dave C. needed haircuts. Dave B. took what was apparently a much needed nap (2 hours long!!!)
We couldn't decide on where to go out to lunch - mainly because I wasn't necessarily in the "mood" for anything.
So we finally decided on some Mexican. We ate at Tacos Cancun in Costa Mesa - which is one of the few local Mexican places that I enjoy.
It's a tiny little place that offers a super tasty varieties of both vegan and non-vegan menu options.

Traffic was just awful on our drive back and at one point the Highway Patrol had us at a complete stand still. To which the kids were rather curious as to what exactly was going on...

I had a pot of Pasta Fasul stewing all day long and in the evening Dave and I went to go catch the movie The Post with my friend Jodie at the AMC Dine In Theatres. It was quite the concept! With ordering full on meals from the comfort of your own personal oversized recliner. Waitstaff takes your order and delivers with very minimal distraction. My only wish is that they offered more vegan food...
The movie itself (although with an agenda) was a very well made movie - go figure it's directed by Spielberg! LOL Overall it was a throughly enjoyable evening.
Today I'm out to finally finish Dave's packing. And to get some more of these errands checked off my list!

Amsterdam Flower Shows
How are you guys today?? I'm doing great.
Our morning started off a bit hectic, as we had to rush off to church for the kick-off of Catholic Schools Week being celebrated at the 9am mass.
Every year around the country, the last week of January is the celebration of Catholic Education. So, the week ahead with be a week of fun activities and events at the girls' school. Kelsey made it into the Math Bee and has a speaking part in the 6th Grade mass this coming Friday. So, Mom will be running back and forth to the school a great deal in the coming days.
The weather is pretty icky out today - wet and rainy. However, as many of you know, I LOVE a good rainy day! It can be so peaceful. It also lends itself to sitting indoors and writing.
I'll be putting the final touches on my newest article for Elisa's Long Island and Travelin' 25: 25 Reasons to Visit Long Island in Winter.
You Can bet I'll be giving lots of suggestions for folks of all ages and interests so don't forget to check back tomorrow!!
Gianna has one of her horseback riding friends visiting from out east today. So, I'll be taking them to the mall for a bit of shopping and eating in a bit.

There are a number of festivals and fairs around Amsterdam to see an array of colorful florals. Among them is the Amsterdam Tulip Festival. The Amsterdam Tulip Festival, which runs from March 31 to April 30 in 2018, showcases more than 800,000 colorful and occasionally rare tulips throughout the city. Some of the key locations are EYE Film Museum, Hermitage Amsterdam, Museum Van Loon, Rijksmuseum and many public squares throughout the city.
Others include Floating Flower Market, Keukenhof and the Aalsmeer Flower Auction.
