I'm so sorry that I missed you yesterday, but really there was just no chance in the world that I woulda had the time to get on here and share the SCOOP with you.
Christmas Eve was glorious (though busy as always and full of lots of work). The kids helped with some of the cookie baking, and when we least expected it there must've been a surprise visit from Santa's eves delivering a few early gifts to be opened before the big day..
I was in the kitchen until 1am on Christmas Eve finishing up my 6 trays Eggplant Parmesan - a family favorite. And that was after and in-between a big Christmas Eve dinner and baking 13 different types of cookies!
But it still wasn't time to hit the hay. It was time to put the the finishing touches on the gifts that were about to go under the tree...
By 4am it was finally time to unwind and hopefully catch some zzz's.
But then at 7am I jumped up to the sound of Mika staring in awe at all the oh so many Christmas gifts that good 'ol Santa so carefully placed under the tree.
And just like in the years past - boy there were a lot of them!!!
However there was still about a 25% increase once Matt, Skip, Khanny, and Houston made there was over to join in all of the festivities!
All in all the event of opening presents took us over 7 hours!
Funny thing is that when we were about two thirds of the way through - Mika commented that we hardly had anymore presents left to go and that we were almost finished. From this point we still had at least a couple of more hours and my thoughts were that she will not and should not ever spend Christmas anywhere else - as I have never seen a load of Christmas gifts (neither in person or in pictures) nearly so HUGE in my entire life!
And by the time I finally got up to make my way into the kitchen and get back to working on dinner - I still had to make the Bruchetta, the Unchicken Parm, and the from scratch Homemade Pasta.
Dinner was AMAZING (if I may say so myself).
FACT - The PJs that I was wearing had the quote "All I want for Christmas is Everything" but instead it should have read "All I need to do for Christmas is everything".
It was and always is a heck of a lot of work - but it is all worth it and I wouldn't have it any other way!
365 days in the year and there can never be a better day or better holiday - so I'm not sure why the others even try to compete. LOL
Anyhow, I'm gonna take my time today, stay in my jammies and enjoy all of my wonderful gifts while surrounded by the fam bam.
